Meal prep can help organize low-carbohydrate meals. Preparation starts with what you intend to eat and storage conditions, not buying special products. A keto meal requires the same hygiene care as any other food.
The combinations below are culinary ideas. Quantities, carbohydrates and meal suitability depend on the ingredients used and your meal planning.
Plan before cooking
Check what you already have in the refrigerator, freezer and pantry. Choose preparations that share ingredients, but separate sauces and complements to be added later. This makes it easy to change presentation without cooking everything again.

- Tofu with broccoli and non-sweet seasonings.
- Well-cooked omelette with cauliflower and leaves served separately.
These suggestions do not have calculated nutritional values. Sauces, cheese, drinks and side dishes must be counted, even when the main ingredient has few carbohydrates.
Prepare and divide the batch
Wash hands and utensils and avoid contact between raw and prepared foods. Use dedicated containers for food, suitable for freezing or reheating as intended. Do not assume any plastic container is microwave-safe.
Divide food into smaller containers to facilitate cooling. Do not leave a large pot on the counter waiting to cool completely. Store leaves and cold components separately from those to be reheated, and label preparation date and ingredients.
Refrigerate or freeze as needed
The Brazilian Anvisa guide for food service recommends refrigeration below 5 °C and freezing at -18 °C or lower. The up to 5-day limit for refrigerated prepared food applies at 4 °C or lower and under controlled conditions. It does not guarantee that every homemade meal prep will last that long.
Plan for few days of refrigerated food and promptly freeze what will be consumed later. Actual equipment conditions, food type and handling matter. There is no single freezing time limit for all preparations; also follow local and manufacturer guidelines.
Transport and reheat with care
Maintain the cold chain during transport. A thermal bag needs proper conditions to maintain temperature; placing the container inside it alone does not solve a long trip without refrigeration.
Thaw in the refrigerator or microwave if cooking will continue immediately. Do not use the countertop to thaw perishable food. When reheating, aim for even heating, including the center, and follow equipment instructions.
Freezing can alter the texture of leaves, sauces and other ingredients. This is different from food safety. Smell and appearance do not prove food is safe, and low-carbohydrate food is not protected against contamination.
